A new take on plant-based hummus, combining the creaminess of tahini with the toasty notes of black sesame and the aromatic flavors of za'atar.

Implementation

  1. Drain the cooked chickpeas, reserving the aquafaba in the refrigerator, then blend them.
  2. Add tahini, salt, cumin, pepper, garlic, and lemon juice, then blend again.
  3. Gradually stir in very cold aquafaba and olive oil until you achieve an emulsified, creamy texture.
  4. Next, add za'atar and black sesame seeds, then gently fold in the Edo® while it's still frozen.
  5. Finish with a little za'atar and black sesame seeds as a topping.
